Fireside Simple Syrup

The allspice is what sold me — it adds this warm, almost baking-spice note that I didn't expect from a cocktail syrup. I've been making these on cold nights and it takes about a spoonful per drink, so the bottle's lasting a while.

I was skeptical about a syrup built for one specific whiskey, but the allspice really pulls the whole thing together over a big ice cube. It's not overly sweet either, so the malt still comes through.

The cocoa nibs and vanilla bean give it a warmth that plain simple syrup just can't match, and it made my evening whiskey feel like an actual occasion. I've started keeping a bottle on the bar cart for cold nights by the fire.
